What it is
Manna was started in Chennai in 2000 by I.S.A.K. Nazar, and its first product was a mix based on sathumaavu, the traditional Tamil multigrain porridge. Panivaragu, proso millet, is one of the old small millets of Tamil Nadu, grown on dry land and cooked the way rice is.
The grains are small, round and pale yellow, and cook up soft and mild, closer to rice than most millets. Swap it in for rice in pongal or curd rice and it mostly goes unnoticed. Choosing between millets? Proso (panivaragu) is mild and quick; foxtail (thinai) is a little nuttier; barnyard (kuthiraivali) is the softest of the three.
Tip: For panivaragu pongal, cook it with a handful of moong dal, then finish with ghee, pepper and cumin.
Goes well with: Manna Foxtail Millet, Udhaiyam Moong Dhal, GRB Pure Ghee
