Little millet, also called samai (Tamil) · chama (Malayalam) · save (Kannada) · samalu (Telugu) · kutki (Hindi) · sava (Marathi).
What it is
Manna was started in Chennai in 2000 by I.S.A.K. Nazar. Its first product was a sathumaavu mix, the Tamil multigrain porridge powder, and millets have stayed at the centre of the range. Samai, little millet, is the smallest grain of the lot.
It cooks quickly and soft, closer to rice than most millets, so it is the easiest one to swap into curd rice or pongal. The taste is mild. Choosing between Manna millets? Little millet for soft and quick; kodo (varagu) for a firmer bite; barnyard (kuthiraivali) for the fluffiest grain.
Tip: Stir the curd in while the samai is still warm, with a splash of milk, so it stays soft until lunch.
Goes well with: 777 Lime Pickle, Heera Black Mustard Seeds, Suswaad Karuvepilai Podi
