What it is

Manna was started in Chennai in 2000 by I.S.A.K. Nazar, and its first product was a health mix based on sathumaavu, the traditional Tamil multigrain porridge mix. Manna's maker, Southern Health Foods, was acquired by Reliance Consumer Products in February 2026.

Thinai is foxtail millet, one of the old Tamil hill grains. Its flour is pale, fine and mild, a little nutty, and it makes soft dosai, adai and roti. Choosing between millet flours? Foxtail for soft dosai and adai; Manna Jowar Millet Flour for bhakri; Naga Ragi Flour for koozh and a darker dosai.

Tip: For thinai dosai, mix equal parts flour and leftover idli batter. It ferments with the batter and spreads thin.
