What it is

This is the plain one: a bread dough baked, sliced and then dried out in a second bake, with nothing worked into it. Karachi Bakery has been making this kind of tea-time baking in Hyderabad since 1953, and it now runs from Banjara Hills.

It is firmer and far less sweet than a biscuit, and it holds together in a hot cup long enough to reach your mouth. Choosing between the rusks? Wheat for plain, jeera when you want cumin against the chai, and the fruit biscuit when the cup is coffee instead.

Tip: Butter first and jam second. Jam straight onto a rusk softens it while you are still spreading.
