What it is

Misal is a bowl of usal with a crunchy mixture piled over it, and the mixture is the part people have opinions about. This is that layer on its own: sev and boondi with peanuts and roasted gram through it, salted and spiced, in a bag big enough for a table of people.

On hot usal it softens from the bottom up, which is why misal is eaten quickly, and dry from the packet it works as an ordinary farsan. Choosing between the mixtures? This one over usal, suki bhel for eating dry, and the bhel family pack when you are chopping onion and tomato.

Tip: Add the farsan at the table rather than in the kitchen. Two minutes in the gravy and the crunch has gone.
