What it is
Red samba is the short, unpolished grain that Sri Lankan kitchens treat as everyday rice. The bran is left on, which is what gives it the colour and the chew, and it also goes into the flour for pittu and string hoppers when it is milled down.
It never turns fluffy, however long you cook it, and it holds its shape under a gravy. Choosing between the red rices? Red samba stays firm and chewy, matta is a longer grain and softer once cooked, and mappillai samba is the Tamil Nadu heirloom one.
Tip: Soak it a full thirty minutes and give it three parts water. Undersoaked red rice stays stubborn in the middle.
