Pale and soft, they puff up in hot ghee within seconds and turn into little sweet bursts in rava kesari, sheera and payasam. They look lovely against the orange of kesari too. Choosing between sultanas? Golden for sweets and cakes; Heera Green Sultana for firmer, tangier raisins that stay whole in pulao; Heera Black Sultana for a darker, deeper sweetness.

Tip: Fry them in ghee after the cashews, and pull the pan off the moment they puff. A few seconds more and they turn bitter.
