What it is

Heera is the main brand of P&B (Foods) Ltd, a Bradford-based company that calls itself one of the largest independent wholesale distributors of Asian foods in Britain and Europe. These are dark sultanas, whole dried grapes, called kishmish in Hindi and ular thiratchai in Tamil.

They are darker and chewier than golden sultanas, with a deeper, almost toffee-like sweetness. Fried in ghee they puff up and turn glossy, which is how they go into payasam, kesari and pulao. Choosing between sultanas? Black for a deeper colour and chew; Heera Golden Sultana for a paler, softer finish; Heera Green Sultana for a firmer bite.

Tip: Fry them last, for a few seconds only. The moment they swell, take the pan off the heat.
