What it is

Daawat comes from LT Foods, a family business founded by Raghunath Arora in the basmati-growing belt around Amritsar in Punjab. Basmati made the name; this bag is their organic sona masoori, the everyday rice of the South.

Sona masoori is a light, medium grain from Andhra Pradesh and Karnataka. It cooks soft and fluffy with no strong fragrance, so it sits quietly under sambar, rasam, kuzhambu and curd rice. Choosing between everyday rices? Sona masoori for light, soft rice; ponni boiled for firmer, separate grains; basmati for pulao and biryani.

Tip: Ten kilos lasts a while. Decant some into an airtight tub for the kitchen and keep the sack sealed and off the floor.
