What it is

Kolam is the small, slender everyday rice of Maharashtra and Gujarat, and Lachkari kolam is one of its best-known names. JSR, short for Jai Shri Ram, is the trade name that fine kolam rice is sold under in the mandis.

It cooks soft and light, with grains that stay separate but still hold together on the plate, and a gentle smell that leaves the dal to do the talking.
