What it is

Chheda's is Mumbai's banana wafer company. Ashok Chheda started it in 1993, the firm was set up in 2005, and it makes potato chips and namkeens too, from its units at Manor and Wada in Palghar district.

These are cut lengthways instead of into rounds, so they eat like chips rather than crisps, then dusted with chaat masala: amchur sour first, cumin behind it, chilli at the back. The long cut holds the seasoning better than a round does. Choosing between the cuts? Long masala for chaat spice, salt and pepper for sharper and plainer, yellow for the children.

Tip: Break a few over a bowl of sliced onion and tomato with lime, and you have a plate of chaat.
