What it is

Kai murukku is shaped by hand rather than pressed through a mould, which is why the coils are uneven and why it costs more to make. The dough is rolled into a rope and wound into a flat spiral before it goes into the oil.

It comes out thicker and denser than thenkuzhal, so it takes a proper bite rather than dissolving. Choosing between the murukku? Kai for the hand-made one you serve to guests, thenkuzhal for the everyday tin, ribbon pakoda when you want gram flour rather than rice.

Tip: Keep the coils whole. Once they shatter in the bag you are eating crumbs with a spoon.
