What it is
Ponni is the everyday rice of Tamil Nadu, grown widely in the Cauvery delta. Boiled, or puzhungal, means the paddy has been parboiled in the husk before milling, which is why the grains are slightly off-white and hold their shape after cooking.
It cooks up soft but separate, with a mild taste that sits well under sambar, kuzhambu and rasam, and it keeps its shape in a lunch box. Ten kilos is the bag for a family that eats rice twice a day. Choosing between Ashvill rice? Ponni Boiled for everyday meals with gravy; Sona Masoori for a lighter raw rice; Idli Rice for batter.
Tip: Soak it for 20 minutes before cooking. Parboiled rice cooks more evenly after a soak and often needs a whistle less.
Goes well with: 777 Kaara Kuzhambu Rice Paste, Annapoorna Sambar Powder, 777 Lime Pickle
