Description
Description
Fish fry from a beach stall at dusk, wrapped in newspaper and eaten far too hot.
- What: Coating masala for fried fish
- Pack: 200 g
- Brand: Annapoorna
- Best for: Meen varuval, fried prawns, tawa fish
What it is
Meen varuval, fish fry, is the side that turns rasam rice or a plain kuzhambu into a proper Sunday lunch: slices or small whole fish rubbed with a red masala paste, rested, and shallow fried on a tawa until the edges crisp.
This masala is that rub, ready ground, so you only mix it with a little water, salt and lemon juice into a thick paste. It clings to the fish and fries up dark red and crisp. Choosing between Annapoorna masalas? Fish Fry for a crisp coated fry; Fish Curry Masala for a tamarind gravy; Chicken 65 for fried chicken or cauliflower.
Tip: Pat the fish completely dry before the paste goes on. Wet fish sheds its coating in the pan.
Goes well with: Annapoorna Fish Curry Masala, Annapoorna Rasam Powder, Idhayam Mantra Groundnut Oil
