Broken wheat, also called godhumai ravai / samba ravai (Tamil) · gothambu nurukku (Malayalam) · godhi rave (Kannada) · godhuma ravva (Telugu) · dalia (Hindi, Punjabi, Bengali) · daliya (Marathi) · fada (Gujarati).
What it is
Anil was founded in 1984 and started out making roasted vermicelli; rava and flours came later. Samba rava is samba wheat, samba godhumai, broken into coarse brownish grits and packed ready to roast.
It is heavier and nuttier than white sooji, and each grain keeps a little bite, so the upma stays loose. Tamil homes use it for godhumai rava upma, kichadi and a savoury pongal. Choosing between rava? Samba rava for upma with bite; Anil double roasted rava for soft white upma and kesari; idli rava for rava idli.
Tip: Use a little more water than for white rava, about 2½ cups per cup. Samba wheat keeps drinking.
Goes well with: GRB Pure Ghee, Heera Curry Leaves, Udhaiyam Chana Dhal
