What it is

Kurnool, in Andhra Pradesh, is one of the districts best known for sona masoori, the medium-grain rice that is the daily staple across Andhra Pradesh, Telangana and Karnataka. It is lighter and slimmer than ponni, and cooks up soft.

In Telugu homes it goes under pappu, charu and avakai; in Tamil homes, under sambar and rasam, with curd rice to finish. It also makes a soft ven pongal, and a 10 kg bag covers the month. Choosing between rices? Sona masoori for light everyday meals; ponni boiled rice for firmer grains; seeraga samba for Dindigul-style biryani.

Tip: For ven pongal, cook it with moong dal and a little extra water until it is soft enough to mash with the ladle.
