What it is

Aachi Masala was founded in 1995 by A.D. Padmasingh Isaac in Chennai, and exports to more than 30 countries. Next to its masalas it packs millets like this one.

Panivaragu is a small, pale-gold millet and one of the old dryland grains of South India. This pack is roasted, which gives it a mild, nutty taste, and it cooks like rice, so it swaps in for pongal, upma or plain millet rice. Choosing between millets? Proso for mild and quick; Manna foxtail (thinai) for nuttier; Manna barnyard (kuthiraivali) for the softest grain.

Tip: For upma, use 2 cups of water per cup of millet instead of 2½, so the grains stay separate.
