What it is

The name 777 comes from the licence number the business was given under India's Fruit Products Order, and its roots go back to Hotel Sri Rama Bhavan in Madras, 1933. Tandoori chicken is marinated in yogurt and spice, then cooked at a fierce heat until it chars at the edges.

This masala is the spice half of that marinade. Stir it into thick yogurt with lemon and a little oil, and the chicken cooks up spicy, tangy and smoky at the edges. Choosing between 777 chicken masalas? Tandoori for grilled and dry; Madras Chicken 65 for crisp fried pieces; Country Chicken Masala for a curry with gravy.
