What it is

777's name comes from the licence number it was given under India's Fruit Products Order, and the business goes back to a Madras hotel opened in 1933. Paruppu podi is traditionally roasted dal ground with dried red chilli and a little hing into a fine powder.

Mixed into hot rice with ghee or gingelly oil it becomes a whole first course, mild and nutty, before the sambar comes round. Choosing between podis? Paruppu podi for rice; 777 idli chilli powder for tiffin; Sakthi garlic rice powder if you want garlic in it.

Tip: Make a small hollow in the rice, add the podi and ghee, and mix well before the first mouthful.
