What it is

777 traces its roots to Hotel Sri Rama Bhavan, opened in 1933 by brothers R.S. Narayanasamy Iyer and R.S. Ganapathy Iyer on Thambu Chetty Street in Madras. The name comes from the licence number the business was given under India's Fruit Products Order.

Rice sevai is the pressed rice noodle of Tamil breakfasts, the same strands as idiyappam without the steaming and pressing. You soak it, drain it and temper it. Choosing between rice noodles? 777 instant sevai for the quickest tiffin; Anil rice vermicelli for a larger pack; Naga idiyappam flour when you want to press fresh string hoppers.

Tip: Spread the drained sevai on a plate for two minutes before tempering. It dries a little and stops clumping.
