Ven Pongal (Savoury rice and moong dal with pepper and cumin)

The savoury twin of sakkarai pongal, and the better breakfast of the two. Rice and moong dal cooked soft, then a ghee tempering of cashews, ginger, curry leaves, asafoetida and, above all, pepper.

Whole crushed pepper, never powder. You should bite into one every few spoonfuls and feel the heat arrive suddenly, which is the whole character of the dish. Ground pepper spreads the heat evenly and flatly and turns ven pongal into something else.

Serve it hot with sambar and coconut chutney. It stiffens quickly, so make it last and carry it straight to the table.

Savoury rice and moong dal with pepper and cumin from Tamil Nadu, made for Ganesh Chaturthi. Whole crushed pepper, never ground powder. Biting into one now and then is exactly what makes it ven pongal.
Ven Pongal (Savoury rice and moong dal with pepper and cumin)

Directions

  1. Roast the moong dal lightly, then pressure-cook it with the rice and water until soft.
  2. Crush the peppercorns and cumin coarsely. You should still be able to bite into the odd whole peppercorn.
  3. Heat the ghee and fry the cashews until gold, then add the crushed pepper and cumin, the ginger, curry leaves and asafoetida.
  4. Pour this over the cooked rice, add the salt, and mix well.
  5. Serve hot with sambar and coconut chutney.
