Ellu Kozhukattai (Sesame and jaggery kozhukattai)

Sesame and jaggery turn up together at every warming festival in the Indian calendar, from Aadi to Karthigai to Sankranti. The pairing means much the same thing everywhere: warmth, and sticking together.

For the filling, roast the sesame until the seeds pop and turn a shade darker, then crush them coarsely. Stop while the mixture is still gritty. Ground to a paste it turns oily and separates in the pan, and the filling loses the faint crunch that makes ellu kozhukattai different from the coconut one. Everything else follows the same rice-flour dough as the rest of the family.

Directions

  1. Dry-roast the sesame seeds on low heat until they pop and turn a shade darker. Cool them completely.
  2. Pulse the sesame coarsely in a grinder. Stop while it is still gritty — grind it to a paste and it turns oily.
  3. Melt the jaggery with a splash of water, strain, and cook to a thick syrup. Stir in the sesame and cardamom and cook until it holds together in a mass.
  4. Make and knead the rice flour dough as before, shape cups, fill and seal.
  5. Steam for 10 minutes.
