Star anise, also called annachi poo (Tamil) · thakkolam (Malayalam) · chakra moggu (Kannada) · anasa puvvu (Telugu) · chakri phool (Hindi, Punjabi) · badiyan / chakra phool (Marathi) · badiyan (Gujarati).
What it is
Star anise is the dried, eight-pointed seed pod of an evergreen tree. In Indian kitchens it goes into biryani and pulao, into garam masala and meat masala, and into the chettinad spice mixes that give those curries their depth. It is a whole spice, used sparingly.
The flavour is sweet and strongly liquorice-like, stronger than fennel, and one whole star is enough for a pot of biryani. Choosing among the biryani whole spices? Star anise for that warm liquorice note, cloves for sharpness, cinnamon for sweetness, and bay leaf for the background.
Tip: Snap off two petals for a small pot of pulao. A whole star is for a full pot of biryani.
Goes well with: Swaad Cinnamon Quills, Swaad Cloves Whole, Swaad Bay Leaves
