What it is

Dried root of the liquorice plant, called adhimadhuram in Tamil and mulethi in Hindi, sold as woody sticks rather than as powder. The sweetness is in the root itself, which is where the Tamil name comes from. Use the amount and the method given on the pack.

Household practice is to split or crush a piece and steep it rather than to grind the lot, so a 400 g bag of sticks goes a long way. Choosing between the forms? Whole sticks where you want to break off what you need, ground powders where convenience matters more.

Tip: Split the stick lengthways before steeping. A whole round piece gives up very little of its sweetness.
