What it is

Shan Foods was founded by Sikandar Sultan in Karachi, Pakistan, in 1981, starting as a small home-based business. It is best known for packaged spice and recipe mixes for South Asian cooking.

This is plain ginger, ground with salt, a little oil and a touch of turmeric. It is sharp and warm straight from the jar, and it saves peeling knobbly ginger with a spoon. Choosing between Shan pastes? Ginger for chai, chole and lighter vegetable curries; garlic for dal tadka; ginger garlic for biryani and most meat gravies.

Tip: For adrak chai, add half a teaspoon to the water and boil it before the tea leaves go in.
