What it is

Sakthi Masala is based in Erode, Tamil Nadu, and was started in 1977 by Dr P.C. Duraisamy as a small turmeric trading business. Sakthi Masala Private Limited was formed in 1997 and makes more than 50 spice and masala powders.

This is the all-purpose curry powder of a Tamil kitchen: the one that goes into potato roast, a dry poriyal, egg curry or a quick chicken fry when there is no time to grind. Choosing between Sakthi powders? Curry powder for dry fries and everyday curries; Sakthi Chicken Masala for chicken gravy; Sakthi Sambar Powder for sambar.

Tip: For potato roast, toss par-boiled cubes in curry powder and salt, then leave them alone in the oil until they crust.
