What it is

Karupatti is jaggery made from the sap of the palmyra palm, the tall tree that lines the roads of southern Tamil Nadu. The sap is boiled down until it thickens and is then set into blocks, and in Tirunelveli and Thoothukudi it sweetens coffee, kanji and festival sweets.

It is darker than cane jaggery, with a deep, slightly smoky taste, so it changes whatever it goes into. Choosing between palm sweeteners? Tip: Melt it in a little warm water and strain before it goes into a sweet. A block can carry small bits of fibre.
