Coriander seeds / powder, also called kothamalli vidhai / malli (Tamil) · malli (Malayalam) · kottambari beeja / dhaniya (Kannada) · dhaniyalu (Telugu) · dhaniya (Hindi) · dhane (Marathi) · dhana (Gujarati) · dhania (Punjabi) · dhone (Bengali).
What it is
Malli is the dried seed of the coriander plant, and nearly every South Indian podi starts with it. Whole seeds keep their smell far longer than ready-ground powder, which is why so many families still roast and grind their own sambar and rasam podi.
Raw, the seeds smell faintly of orange peel. Dry-roasted a shade darker, they turn warm and toasty. Choosing between coriander packs? This 300 g bag for grinding podi at home; Natures Coriander Seeds 100g if you only crush a little; Heera Cumin (Jeera) Whole to roast alongside it.
Tip: Roast on a low flame until a seed crushes easily between two fingers. Any darker and the podi turns bitter.
Goes well with: Heera Methi Seeds / Fenugreek Seeds, Aachi Red Chilli Long Stemless, Heera Toor Dal Plain
