What it is

Native Food Store was started in Chennai in 2016 by P. Vishnukumar, an engineer by training, as a one-stop shop for millets and millet-based products. Makka cholam is maize, the same corn sold roasted on beach carts, and this pack has it broken to a coarse rava.

It cooks up golden and faintly sweet, and coarser than wheat rava, so the upma stays grainy rather than smooth. Choosing between Native Food Store rava? Makka cholam for sweet and yellow; kambu for earthy and coarse; ragi for a darker, softer upma.

Tip: Dry-roast the rava first until it smells nutty. Skip this and the upma turns sticky.
