What it is

MTR traces its roots to the Mavalli Tiffin Room restaurant, opened in Bengaluru in 1924 by Yagnanarayana Maiya. The Mavalli Tiffin Room is widely credited with inventing rava idli during a rice shortage in the Second World War.

This is the masala version, with the seasoning already mixed in, so the idlis come out speckled and savoury rather than plain. Stir in curd, rest, steam, and there is no grinding or fermenting at all. Choosing between rava idli mixes?
