What it is
Samai, little millet, is one of the small millets grown across the dry lands of Tamil Nadu, Andhra and the Deccan. Before polished rice took over, samai sadam and samai pongal were ordinary meals in many villages.
The grains are tiny and cook soft in about fifteen minutes. It tastes mild and takes on whatever is served with it, from sambar to curd, and a plate of it looks and eats much like rice. Choosing a millet? Samai for soft, rice-like grains; foxtail (thinai) for something a little nuttier; kodo (varagu) for a firmer bite.
Tip: Samai makes a good curd rice. Cook it with a little extra water, let it cool, then mix with curd and a mustard and curry leaf tempering.
