Kothavaraikai Vathal is the stuff of dreams as it is a product tha takes meticulous preparation and the right amount of spices to be used to marinate it with. It is then left out in the sun to dry and allow the kothavaraikai to absorb the spices and enhance the flavouring of the product. This product can be eaten as is or can be tossed in oil and used as an accompaniment especially with curd rice.
