What it is

Heera is the main brand of P&B (Foods) Ltd, a Bradford company that describes itself as one of the largest independent wholesale distributors of Asian foods across Britain and Europe. This is its plain everyday chilli: long, dried and whole, the kind every Tamil kitchen keeps in a jar beside the kadugu.

Snapped into hot oil, they give a tempering its smoky edge. Soaked and ground, they become the red base of vathal kuzhambu, chutneys and pickle pastes, and roasted with coriander and dal they turn into your own sambar podi. Choosing between chillies? Long chillies for everyday heat; Kashmiri for colour with gentler heat; bird's eye for sharp, fierce heat.

Tip: Take the pan off the heat the moment the chillies darken. Burnt chilli turns the whole tempering bitter.

Goes well with: Sri Durga Tamarind Seedless, Heera Black Mustard Seeds, Idhayam Gingelly (Sesame) Oil
