What it is

Heera is the main brand of P&B (Foods) Ltd, a Bradford-based company that describes itself as one of the largest independent wholesale distributors of Asian foods across Britain and Europe. These are its bird's eye chillies, the tiny ones Kerala homes call kanthari.

They are small enough to lose in the palm of your hand and far hotter than the long red chillies in most kitchens, with a sharp heat that hits fast. One or two, snapped open, is plenty for a whole pot. Choosing a dried chilli? Bird's eye for serious heat, long red chilli for everyday tempering, Kashmiri chilli for colour with little heat.

Tip: Snap one into the oil whole and fish it out before serving. You get the heat without anyone biting into it.
