What it is

Daawat is best known for basmati. It comes from LT Foods, a family business founded by Raghunath Arora in the Amritsar basmati-growing belt of Punjab. This bag is the South Indian side of the range: idli arisi, a short grain parboiled before milling.

Parboiled rice is what lets the batter ferment and rise, so the idli comes out soft rather than dense. Ground to a fine grit, it also gives dosa a crisp edge. Choosing between rice? Idli rice for batter; ponni boiled for everyday meals and curd rice; seeraga samba for biryani.

Tip: Ten kilos is a lot of batter. Keep the bag sealed and off the floor in a cool cupboard.
