What it is

Anil was founded in 1984 and started out making roasted vermicelli; the millet semiyas came much later. Cholam is the Tamil name for jowar, or sorghum, a tall dryland grain eaten across the Deccan as bhakri and roti, and in Tamil villages as kali and kanji.

As semiya it cooks in a few minutes to a pale, mild strand with a faint sweetness. It takes a mustard and curry leaf tempering as easily as a spoon of sugar and grated coconut. Choosing between Anil millet semiyas? Cholam for mild and pale; Varagu for a firmer bite; Ragi for a dark, earthy plate.

Tip: Add grated carrot and a handful of peas to the tempering. Cholam semiya is mild enough to carry vegetables without tasting of them.
