What it is
Anil was founded in 1984 and started out making roasted vermicelli. Its range has since grown into flours, and this is its chakki atta: whole wheat flour ground in a chakki, the traditional flour mill.
It kneads into a soft dough for chapati, paratha and poori, and the 1 kg bag suits a kitchen where roti is an occasional dinner rather than a daily one. Choosing between attas? Anil chakki atta 1 kg for the odd roti night; Aashirvaad chakki atta 5 kg for daily chapati; Aashirvaad multigrain for a nuttier, heartier roti.
Tip: Knead with lukewarm water and a spoon of oil, then leave it covered. Rested dough rolls thinner and puffs better.
Goes well with: Heera Ajwain Seeds, 777 Lime Pickle, Heera Butter Ghee
