What it is
Aachi Masala was founded in 1995 by A.D. Padmasingh Isaac in Chennai, and its products now go to more than 30 countries. The pickle range is made in the South Indian way, in sesame oil.
Green chillies are cured in sesame oil with mustard, fenugreek, turmeric, salt and lemon, so the heat comes with a sharp, sour edge. It is properly hot, and a small spoon is the serving. Choosing between Aachi pickles? Green chilli for heat with lemon; red chilli for a fennel-scented heat; gongura for sourness first.
Tip: Chop one piece finely into a plate of plain dal and rice. It wakes the whole plate up without drowning it.
Goes well with: Heera Moong Dal Washed, Sri Annam Thanjavur Ponni Raw Rice, 777 Appalam
