What it is

777's roots go back to 1933 and Hotel Sri Rama Bhavan in Madras, opened by brothers R.S. Narayanasamy Iyer and R.S. Ganapathy Iyer. Chicken 65 is Chennai's own fried starter: boneless pieces in red masala, deep fried until crisp and tossed with curry leaves and green chilli.

This masala is the marinade base, so you add curd, ginger garlic and a spoon of cornflour for the crust. Choosing between chicken masalas? Chicken 65 for dry and crisp; 777 tandoori chicken masala for the oven or grill; 777 country chicken masala for a village-style gravy.

Tip: Fry in small batches so the oil stays hot, and throw in the curry leaves for the last ten seconds.
