777 started with Hotel Sri Rama Bhavan on Thambu Chetty Street in Madras, opened in 1933 by brothers R.S. Narayanasamy Iyer and R.S. Ganapathy Iyer. Kuzhambu milagai thool is the Tamil chilli blend that goes into tamarind gravies, usually red chilli and coriander with a few other spices.

It is darker and hotter than sambar podi and gives a kuzhambu its deep red colour. Choosing between powders? Kuzhambu chilli powder for tamarind gravies with no dal; 777 Madras sambar powder for sambar; 777 Madras curry powder for meat and vegetable curries.

Tip: Add it to the oil on a low flame for a few seconds before the tamarind water. It scorches fast.
