Varan bhaat is deliberately plain. No onion, no garlic, no chilli. Toor dal cooked until it collapses, whisked smooth, seasoned with nothing more than salt, a little jaggery and a pinch of asafoetida, poured over hot rice with a spoon of ghee and a squeeze of lemon.
It goes on the naivedyam plate beside the modak, and its plainness is the point. Everything else on that plate is rich and sweet and worked over. This is the quiet dish that makes room for the rest.
If it tastes flat to you, it needs salt and the lemon, not more spice.
